Ingredients
- 400 g cooked sauerkraut (see basic recipe)
- 12 thin slices of country-style bacon
- 2 eggs
- 10 cl of crème fraîche
- 200 g farmhouse Munster cheese
- 1 pinch of salt
Preparation
- Remove the rind from the bacon. Line the inside of four stainless steel rings (12 cm in diameter) with the best slices; cut the remaining slices into bacon bits. Sauté the bacon bits lightly over high heat.
- In a mixing bowl, combine the sauerkraut, bacon bits, eggs, and cream. Place the rings on a nonstick baking sheet. Fill them with the sauerkraut mixture. Bake for 20 minutes at 180°C.
- Top with Munster cheese and continue cooking until the cheese has melted. Serve with a green salad dressed with hazelnut oil.
Suggestion: Serve with an Alsatian Pinot Noir.
